Seasonal Greens and Warm Salads

Ayurveda uses sesame to deliver calcium to the body.

Cucumbers are cooling and good for summer meals and to balance pitta dosha.

Greens are cleansing and good for kapha dosha and during the spring season.

Kitcharis is an Ayurvedic staple consisting of reis and mung bean mix

Rice, mung beans with cooked vegetables, is an Ayurvedic staple.

Rice and mung beans cooked together are called "kitchari" or "kitchadi" in Ayurveda.

Kitchari with yellow split mung dal or mung beans. An Ayurvedic staple and good for cleansing.

Use what you have at hand and always feel to use substitutes.  The ingredients have to be fresh and only non processed foods should be used.
